DHOKARA (Steam Semolina and Chickpea Cake)
4 Cups Semolina
1 1/2 Cups Chickpea Flour
1 Tablespoon crushed Ginger
Salt to Taste
1 Teaspoon Chilli Powder
Handful of Sesame Seeds
Pinch of Sugar
Pinch of Turmeric
Curry Leaves (Optional)1 Carton Yoghurt (500 grams- medium sized)
Handful of Mustard Seeds
1. Mix dry ingredients together.
2. Mix 3-4 cups of water with the yoghurt. (If the yoghurt is very runny then just add 2 cups of water to it and mix it thoroughly before adding it to the dry ingredients.)
Now mix no 1 and 2 together.
Mix 2 caps ful of eno into this mixture.
Apply oil to two small plates in which the Dhokara are going to be steamed. (can use cake tin)
Now pour the mixed mixture in to these plates, sprinkle some sesame seeds on the top and some chopped coriander.
Steam for at least 10 minutes or until the mixture is set and firm.
To test the firmness of the Dhokara use a fork or a butter knife.
Once the Dhokara has cooled down. Fry some mustard seeds, and curry leaves pour this mixture onto the Dhokara.
To serve, cut the Dhokara into diamond shapes and serve with coconut or mint chutney.
