The potatoes are a big favourite within the Fiji Indian Community. It is a very versatile vegetable that goes with everything. It gives a simple dish that extra zest. Here, I am sharing a very simple way to make potatoes. This potatoes dish is popular in Fiji and is cooked weekly in the Fiji Indian homes.
Jeera Alu Recipe Fiji Style (Potato Cumin Curry)
4-5 medium size Potatoes
1-2 Garlic cloves finely chopped
1 tsp Jeera (cumin seeds)
1 medium-large Onion
1-3 tablespoon oil
1 tsp salt
Peel, wash and halve potatoes into two and finely slice them. The sliced potatoes should not be too thick or too thin. Now finely slice the onion. Heat 1-3 tablespoon of oil in a wok/karahi (Indian style wok) or in a deep pot. When oil gets hot, lower the heat and add cumin. When cumin starts to sizzle, add the sliced onions and garlic. Stir fry this on low heat until the onion starts to go bit brown in colour. Now add the sliced potatoes and salt and stir it all together. Put the lid on the pot and cook it slowly. Keep stirring the potatoes every now and then. The aim of this dish is for the potatoes to get some crust which will give this dish a unique taste. Once this crust is formed and the potatoes is cooked your dish is ready. Enjoy this dish with roti or dhal and rice.
